Poor quality control can lead to hidden defects, cracks, and warped material. These chemicals could be toxic and change the flavor of artisan cheese.

Plastic boards are full of microplastics. Cutting releases these into your cheese. Excessive ingestion of microplastics has been linked to inflammation, oxidative stress, and potential harm to the liver and heart. Knowing the source of your cheese surfaces is important.

Walnut, cherry, and maple are the gold standard because of their tight-grain structure, which is easy to clean and resists bacteria. Avoid porous woods like red oak, ash, hickory, and pine because they can trap bacteria and liquids. Many inexpensive boards have artistic grooves that collect bacteria; our woodworkers use inlays to prevent this while adding creative flair.
